Let’s face it, fiber is a very important component of a healthy diet. And drinking a fiber rich smoothie is an easy way to pack a lot of fiber into one meal. For this green smoothie, I decided to create a bran muffin (of sorts) with Fiber One cereal. Banana and blueberry are pretty natural partners in my opinion, so they were prominently featured in this smoothie. Let’s look at the fiber content: the Fiber One cereal brings 14 grams, the banana 3 grams, and the blueberries add 2 more grams for a total of 19 grams of fiber! There’s a bit of fiber in spinach and coconut or almond milk too, but you can confidently count on the cereal and fruit delivering a solid fiber punch.

What you get is a rich, not very sweet smoothie experience. If you prefer your smoothies a  little sweeter, add a bit more banana or a bit of Stevia to enhance it. The Fiber One cereal adds to the texture in a good, non-disruptive way. If you served this to someone sight unseen, they would never suspect that cereal was added to this smoothie. Nor would they be disturbed by large chunks of fiber or cardboard as I’ve heard many people unaffectionately refer to it. It’s pretty much not there! However, as an avid green smoothie consumer, I can tell you that it adds to the body of the smoothie in a really nice way.

Ingredients

  • 8 oz Unsweetened coconut or almond milk
  • 2 handfuls of greens (I used baby spinach & baby kale mix)
  • 1/2 cup Fiber One Bran Cereal
  • 1/2 cup blueberries frozen
  • 1 banana frozen

Instructions

  1. Combine unsweetened coconut or almond milk, greens, and Fiber One cereal to the blender (preferably Blendtec or Vitamix for best results).
  2. Add the blueberries and banana and blend to desired consistency.
  3. Pour into a cup and enjoy!
