Maximize Your Energy with a Green Sunshine Smoothie

If you remembered to “spring your clock forward” this weekend, then you’re feeling the pains of losing an hour of sleep on Saturday night and that horrible sleep disruptor called your alarm this morning. How many times did you hit the snooze button? Five times? Yeah, that sounds about right. Did you take a shower in the dark? Yep, me too. Ugh!

If the coffee’s not working and you’re still dragging, then it’s time to insert a little sunshine into your day! A little green sunshine…that’s what I like to call this little gem of a smoothie. It’s one of my absolute faves, packed with all kinds of energy sourcing goodness and it delivers a nice protein punch too! Despite the name, it doesn’t retain a bright green “sunshiney” color once you add the fruit. But, it definitely delivers on a “sunshiney” taste. It is bright and yummy!

Don’t worry, if you find yourself hitting the snooze button tomorrow and showering in the dark again, you can start your day with this green smoothie. You’ll be rarin’ to go!

Green Sunshine Smoothie

This is a vitamin packed, energy boosting, protein smoothie to start your day off right!

Ingredients

  • 1 cup orange juice fresh squeezed
  • 2 handfuls greens (spinach kale, or mixed greens)
  • 1 handful baby carrots
  • 1/2 " nub of ginger peeled (optional)
  • 1/4 cup peaches frozen
  • 1/4 cup blueberries frozen
  • 1 banana frozen
  • 1/4 cup plain greek yogurt or cottage cheese
  • 1 Tbs . flaxseed meal

Instructions

  1. Combine orange juice, greens, carrots, and ginger (optional) in blender (preferably Blendtec or Vitamix for best results).
  2. Add the rest of the ingredients and blend to desired consistency.
  3. Pour into a cup and enjoy!

Recipe Notes

Options: If you prefer less sweetness, use 1/2 cup of water in place of the orange juice and include a peeled orange instead. Or, try a 1/2 cup of orange juice and 1/2 cup of water.
When I first created this recipe, I made the first option in the notes and it was good, but the second time around I replaced the water and orange with orange juice and I really enjoyed the brightness of the juice in this smoothie.
