Crush garlic, dice veggies (first 5 ingredients listed) and put into slow cooker.
Add frozen O'Brien Potatoes and all the rest of the ingredients listed.
Turn on slow cooker to low heat and let cook for 10 hours.
When done, ladle into bowls and serve.
