Ingredients
Cauliflower Crust
2cupscauliflowercoursely chopped
1/2teaspoondried basil
1/2teaspoondried oregano
1/2teaspoongarlic powder
1/2tspgarlic salt
1/4cupmozzarella cheeseshredded
1/4cupParmesan cheeseshredded
1eggslightly beaten
Pizza Sauce
1cupchunky marinara sauce or canned chopped tomatoes
2clovesgarliccrushed
2tspbalsamic vinegar
1/4tspdried basil
1/4tspdried oregano
1/4tspcrushed red peppers
1/4tspgarlic salt
1/4tspblack pepper
Toppings
1cupmozzarella cheeseshredded
1-2roma tomatoessliced
2-3Tbsfresh basil leaveschopped, sliced or whole
Instructions
Make the Crust
Preheat oven to 425.
Coursely chop cauliflower and place in a heat-safe bowl and cover with plastic wrap (or use a Ziploc 'Zip 'n Steam' bag for a similar effect).
Microwave for 4 minutes, remove plastic, and transfer to a ricer to squeeze water out of the cauliflower. Squeeze firmly to drain - the cauliflower will not process through the ricer.
Put a few florets at a time into a blender or food processor and pulse until thoroughly minced. Repeat until all cauliflower is minced.
Place cauliflower in a bowl and add basil, oregano, garlic powder, garlic salt, mozzarella, and Parmesan cheese. Mix well.
Add egg and mix thoroughly.
Line a cookie sheet with parchment paper and spread mixture out into your shape(s) of choice (we like a rectangle), approximately 1/4 inch thick.
Work the mixture into an even layer, using a rubber/silicone spatula. It works well to even out the thickness and clean up the edges (if you want).
Bake for 15-20 minutes or until golden brown.
Make the sauce
Warm a small sauce pan to medium heat and add all the ingredients listed for the sauce above and mix well. Heat for 2-3 minutes just to get the flavors to combine. Set aside.
Add the Toppings
Once the crust is golden and to your liking, top with sauce, cheese, sliced tomatoes, and basil. Return to oven until cheese is melted.
Let rest for a couple of minutes, then slice and serve.
