Ingredients
5-6cloveswhole garlic
2-3jalapeƱossliced (with seeds for heat; remove seeds for less heat)
1/2white onioncoursely chopped
6vine ripened tomatoes
1/2limejuiced
2tspgarlic salt
2tspblack pepper
1tspcrushed red peppers
Instructions
Preheat cast iron skillet on high and once it's nice and hot, add the garlic cloves, jalapeƱos, and onion to the dry skillet. Let the veggies sit in skillet a bit so they can blacken. Stir gently to flip them to the opposite site for blackening. After a few minutes, remove the blackened veggies and set aside.
In the same hot, dry cast iron skillet, add your tomatoes. Tomatoes are a little trickier since they don't have sides, but allow to blacken in a spot and then rotate the tomatoes, turning until you get some nice blackened spots all around. The skins will crack and that's okay. This process could take 4-6 minutes.
Remove tomatoes to cool a bit.
Once cooled, put all the veggies into the blender, along with lime juice and spices. Pulse until it's a consistency that you like.
