Today, I was in the mood for protein and first on my hit list was tofu! I still had some leftover Chunky Vegetable Marinara in the refrigerator, so I decided that sautéing tofu and adding it to the marinara was money shot, as they say. Although, I admit…I didn’t see any money after preparing this dish. Hmmm, maybe it wasn’t the money shot after all. Perhaps it was just what the doctor ordered. No, that’s not right either. I haven’t been to the doctor lately. Anyway, it’s what I decided to prepare. How ’bout that?!

Sautéing tofu is pretty quick and easy once you prep the tofu. In order to prep the tofu, drain the water out of the package and place the tofu on a paper towel lined plate. Add more paper towels to the top of the tofu and cover with a wooden cutting board or two (or similar object) for 5-10 minutes. Make sure that whatever you place on top of the tofu is not breakable. During the draining process, the tofu often collapses one side, therefore what’s on top may not remain on top for long.

Once the tofu is properly drained, cut into desired slices or chunks and add to a hot pan with a bit of olive oil. Sauté until golden brown. Add the marinara sauce to the tofu and heat through.

Ingredients

  • 1 block firm tofu
  • 2 tsp olive oil
  • 1 tsp garlic salt
  • 1 tsp black pepper
  • 4 cups Chunky Vegetable Marinara
  • 1/2 spaghetti squash cooked

Instructions

Prepping the tofu

  1. Drain water and remove tofu from package.
  2. Fold a few paper towels and put on a plate. Put the tofu on top of the paper towels and top with another few folded paper towels.
  3. Place a wooden cutting board or two on top to press the excess liquid out. Let sit for 5-10 minutes.
  4. Cut the tofu block in half and wrap up the other half and refrigerate for later use.
  5. Chop the remaining half block into 1/2" cubes.

Sautéing the tofu

  1. Heat a pan to medium high heat and add olive oil.
  2. Season the tofu with garlic salt and black pepper.
  3. Sauté until golden brown on all sides.
  4. Add the marinara sauce to the tofu and heat through.
