Peppers Olé Scramble

Two of my favorite things (to eat, anyway)…breakfast and leftovers. Leftovers are great because you only have to warm them up. But let’s face it, five nights of the same meal will drive just about anyone batty, unless you’re a dog. Haha! Why not mix it up a little and re-purpose the leftovers in the form of a hearty breakfast or BFD (that’s Breakfast for Dinner in my lingo)?

Making Peppers Olé Scramble is really easy! If you already did the hard part of making Stuffed Peppers Olé, then adding some eggs is pretty easy, right? And since I have a drawer full of fresh veggies, I also added in some shallots, mushrooms, and asparagus, yum!

So, let’s get down to it and get to the dirty work, shall we?

Peppers Olé Scramble

Use leftover Stuffed Peppers Olé as the base for this recipe. It's a little leftover revival, if you will!

Ingredients

  • 6 eggs beaten
  • 1/3 cup milk
  • 1 Stuffed Pepper Olé chopped
  • 1 shallot chopped
  • 1/2 cup mushrooms coursely chopped
  • 5-6 asparagus stalks chopped
  • 1 Tbs olive oil
  • 1/4-1/2 cup Mexican or Pepper Jack cheese shredded
  • Salt & Pepper to taste.

Instructions

  1. Crack all 6 eggs into a bowl, add the milk and whisk until fully combined. Add a little salt & pepper, if you like.
  2. Preheat a nonstick pan to about Medium or a little hotter if needed for sautéing vegetables.
  3. Chop 1 Stuffed Pepper Olé, stuffing and all; set aside.
  4. Chop all veggies - feel free to add what you like or have on hand.
  5. Add 1 Tbs olive oil to preheated pan and add in your chopped veggies and sauté for 2-3 minutes (hold out the Stuffed Pepper Olé).
  6. Add the chopped Stuffed Pepper Olé and sauté everything for 1-2 minutes.
  7. If your pan is hotter than Medium, adjust heat accordingly and cool down the pan, if needed before adding eggs.
  8. Pour the whisked eggs over the sautéed veggies and let sit for about 1 minute.
  9. Gently flip the eggs over in the pan as if you were flipping a pancake (minus the gusto in flipping). Despite the name, you want fluffy eggs, not beaten ones.
  10. Cook until desired consistency, approximately 3-4 minutes.
  11. Transfer Peppers Olé Scramble to plates and serve.
  12. Salt & pepper to taste, if desired.

Recipe Notes

Stuffed Peppers Olé can be made vegetarian or with meat. Depending on how you made/make them, this dish can easily be made meat optional.
