Keep It Simple: Salmon and Asparagus

Sometimes, you just have to keep dinner simple and healthy and what better way to do that than with some salmon and asparagus? I hear people complain so often that they make poor food choices because they lack time. Let me tell you, I can definitely relate to lacking time…somehow it seems that we’re all strapped for time these days. What’s happening? Is the clock speeding up or are we packing too much into our days? I suspect that it’s the latter. I haven’t heard about any shifts in the time continuum, have you?

Let’s move on to cooking up a quick dinner, shall we? Let’s say that you only have 20 minutes to make or grab dinner. Within that time, you can drive to a fast food restaurant and grab some grub (and trust me, it will be grubby) OR you can grill or pan sear some salmon and steam some asparagus. Which sounds better to you? You already know my answer, right? Save the gas and save your gut…choose the salmon and asparagus instead. And if you can’t do without the carbs, you can also cook up some noodles or rice within that 20 minute time period as well. Dinner doesn’t have to be complicated. Keep it simple and keep it nourishing.

Salmon and Asparagus

Ingredients

  • 12 oz wild salmon
  • 1/2 lb asparagus trimmed
  • 2 tsp garlic salt
  • 2 tsp black pepper
  • 1 tsp cajun spice
  • Lemon sliced (if desired)

Instructions

  1. Cut 12oz salmon into two pieces.
  2. Season both sides of the salmon and seer in a sauté pan on medium heat. Flip the salmon once the edges look cooked. Approximately 5-7 minutes per side.
  3. Break the stalky bottoms off the asparagus. They should snap off in a natural place if you hold the bottom in one hand and about midway down the stalk in the other hand when you snap.
  4. Put the asparagus in a steamer and steam for 12-15 minutes or until desired tenderness.
  5. Slice lemon (if desired).
  6. Plate the asparagus and salmon and squeeze lemon on top.
